“Power of vegetables” is necessary to establish a “healthy country”.

Japan is among the leading countries in the world with the highest average life expectancy. While it is delightful news, on the other hand medical problems and lifestyle-related diseases are growing. To truly boast the title of “”the country with the highest life expectancy””, it is important to think about how we can live long and healthily at the same time.

What should we eat now that our diet becomes more westernized? The hint goes back to more than 1800 years ago, in the ancient Chinese text “Gishiwajinden (魏志倭人伝)”. In that text, it mentioned that the people who lived long had “ate vegetables all year round regardless of seasons”. From this, we can deduce that the secret to living long and healthily is to eat vegetables.

Vegetables are rich in vitamin C, folic acid, carotene, and minerals such as calcium, potassium and iron, which are necessary for good health. Yet we do not consume enough of these vitamins and minerals in daily life. Green and yellow vegetables, especially, contain plenty of carotene which has antioxidant properties to strengthen the immune system and protect the body from “”rusting”” due to aging.

The health function of other components in vegetables, such as dietary fiber, polyphenol, natural amino acids, etc. are becoming clearer nowadays. The power of vegetables that has been discovered in the past is what we need to live long and healthily right now.
